How to Make a Flavorful Vegetable Broth

Preparing a well-balanced, flavorful vegetable broth at home is not only easy, but also a great way to salvage leftover vegetables in your fridge. Simmering a handful of vegetables, herbs and spices with water will reward you with nutritious and fragrant soups, risottos, stews, braises and countless other dishes. Just throw them in a pot, and you’re done. It is really that easy. I’ve used this broth in a soup and vegetable dish recently and was amazed with the results.

The recipe you’ll find below is a highly-customizable guideline. You can substitute pretty much anything in the recipe, but I strongly advise that you keep three vegetables that are essential for a highly aromatic vegetable broth : Carrot, onion and celery.

Pomegranate Sorbet Recipe

A quart of this pomegranate sorbet will set you back $12 in San Francisco, $22 ($15 on sale) in New York & Houston, £15 in Scotland, €10 in Tuscany and $35 in Iowa, but a pint of Ben&Jerry’s costs almost 13$ here in Istanbul, so I guess we’re even.

Seriously, if you happen to come across pomegranates on sale, or if you’re lucky to have a pomegranate tree in your back yard, don’t even think twice and start churning. I can not tell you how much the guests at the New Year’s Eve dinner party appreciated this icy-cold, tangy sorbet after two full plates of turkey and side dishes. You might think a sorbet should be the last dessert on a winter dinner table, but think of all the hearty stews you eat and how you crave something refreshing after such a meal. This, dear reader, is the perfect dessert for winter. Period.

Ice Cream Bombe Cake

New Year’s Eve dinner parties at the mansion last for two days. The first night is a joyful gathering between close friends. Everyone is on their best behavior. 12 grown-ups and few kids dining like royalty. Come next afternoon, things get ugly. The vultures are back at the table for a leftover lunch party. No plates, no silverware, no rules, no mercy. The first pair of claws grabs the drumstick. The weak are left with scraps of stuffing and maybe a few slices of carrots. They eat at the kids table with their head down.

So, jokes aside, what is the perfect dessert that will feed this group for two days? In our case, it was a double batch of Toblerone milk chocolate ice cream bombe sitting on top of a pistachio brownie, covered with a quarter pound of chopped pistachios. Also known as “The Ice Cream Bombe Cake”!
