Stuffed Zucchini

Zucchinis rarely make their way into my grocery shopping list. On those rare occasions, I usually end up slicing and steaming them, which transforms it into a healthy but bland and boring dish.

Stuffed Zucchini

This time around, I wanted to try something new. I adapted the filling from my dolma recipe and stuffed these babies. Purely for presentation purposes, I shaved the zucchinis with the serrated side of a corer. The result is a light and very tasty lunch.

Ingredients

Method

  1. In a medium-sized pot, sautee rice and diced onion in olive oil on medium high until translucent. Reduce temperature to medium-low and add currants & 1/3 cup of boiling water. Add cinnamon, salt and pepper. Cover and cook until water is absorbed. Take off heat and let cool.
  2. Stuff the zucchinis with the filling, arrange in a small pot open side up. Add 1/2 cup of boiling water in the pot and cook covered on medium low for 20-25 minutes. Turn the heat off and drizzle olive oil on top of the zucchinis. Cover and wait until the pot reaches room temperature. Enjoy!

    Kabak midemizin özsuyunu temizleyen sağlıklı bir sebzeymiş, bu sebeple ben çok severim ve bol bol yerim.
    Bu tarifi denememiştim teşekkürler.

    Fernando bu kabaklar belli ki leziz olmuş ve estetikde görünüyor. Sunum yemekte çok önemli olduğundan merak ettim, kabakların dışı nasıl böyle çizgi çizgi oldu?
    Denemek istiyorum sevgiler.

    I’d say the presentation is really cool - I like the stripy finish you’ve got! Stuffed courgettes/zucchini are realy lovely - I’ve just planted lots of courgette seeds, so I expect to be baking and making lots of stuffed courgettes this summer:)

    Cenk, I almost always use some mint when I cook zucchini, it gives the (admittedly) rather bland taste of zucchini cooked in a healthy way some pep!

    I’ve made stuffed courgettes forever but never so stylish as yours, Cenk! :)

    A common stuffing here is rice + ground beef.

    Gosh, pretty. It hadn’t occured to me to stuff zucchini, but I tried for dinner last night, with a few different types of rice, and it was lovely - thanks for the idea.
