Tartlets

I had a mission: To bake the perfect mini tartlets. It all began with a birthday gift I received from a friend of mine who was in New York a couple of weeks before my birthday.

He brought me mini tartlet molds from Williams Sonoma. My initial reaction was “Damn, these are cute, but am I supposed to cut mini sheets of parchment paper and fill each of them with dried beans to blind bake all these?”

Then I caught Ralph looking at me. His eyes were saying “Just suck it up and bake me those tartlets!”

I have very warm hands. Very unfortunate especially when you’re rolling and lining tart dough… Even more unfortunate if you’re using mini tart molds. All that pain multiplied by 30. So keep that in mind. Never buy mini tart molds for your friends with warm hands. Hear me Martha, put this tip in your next book; it is a good thing!

For these tartlets, I wanted to try a new tart dough recipe. Even tough there was this strong feeling that a flaky crust with a minimal amount of sugar will not do the job, I set out to prepare the Flaky Tart Shell from Kate Zuckerman’s book, because I noticed at the last minute that I had no eggs in the fridge. The result was quite nice but not exactly what I had in mind.

And then the custard… Custard without eggs? Not possible my friend. I did my best with milk and rice flour and the result was far away from what I had in mind - again. I was nearly throwing these into the garbage bin, but then I thought about starving people in the world and the fact that I haven’t posted anything in two weeks. So I diced some fruit, arranged the tartlets and took photos.

The taste was not so good, but at least the photos turned out OK.
