Raspberry and Lemon Muffins
April 17th, 2008 | Category: Baked Goods, Cakes

It has been a hectic week. I can’t even lift a finger, let alone bake. But I was instantly off the couch when I saw this. I adapted Lara’s recipe according to what I had in the freezer and an hour later I was enjoying these moist muffins full of tangy berries.
Below you will see a few tips and an amazing technique I learned from Dorie’s books, which transform an ordinary muffin into an extraordinary one.
Raspberries used in the recipe are frozen and that is another plus of this recipe. Always keep a box of frozen raspberries (or any other berry) in your freezer and you’re good to go anytime you crave something sweet. Mix the dry and wet ingredients in separate bowls, spoon them into muffin cups and you’re done. It is really that easy. Plus, there is not much to clean up afterwards. That is always a good thing!

Clementine and Olive Oil Cake
January 23rd, 2008 | Category: Baked Goods, Cakes

Sweeter than an orange, larger than a tangerine. This seedless, deep orange-coloured beauty is called a clementine.
You can buy them for their looks alone. I had a different motive. You remember my “Monday morning syndrome” cake? I was in desperate need of one this week…

Chocolate and Chestnut Buche de Noel
January 08th, 2008 | Category: Baked Goods, Cakes, Chocolate

Here’s the Chocolate and Chestnut Buche de Noel with Marzipan Mushrooms and Acorns we enjoyed at the New Year’s Eve dinner party. Come December, there would be a debate at the Mansion on what to prepare for the dinner party. For dessert, a few would always insist on a chocolate and raspberry cake, just because nothing can top that. Some wouldn’t even participate in the debate, since they pretty much enjoy everything. For me, it has to be something new. For one, I have a food blog and it is always nice to blog about something new. Secondly, how do we know the cake we ate last year was the best without exhausting all the possibilities from the piles of cookbooks I bought over the years? Someone needs to put them into good use, right?
