Brownie Muffins

I have been trying to eat reasonably these days… I (try to) refrain from eating greasy food, try (very hard) not to think about chocolate and ice cream and (occasionaly) eat half of what I usually eat. It is either that or a new wardrobe (and artery).
Yesterday night, I needed a small break. After all, isn’t dieting all about deceiving your metabolism with small surprises? My mission was to bake something that would stop my craving. It had to be prepared in max. 15-20 mins time and had to be on my lap in another 20 mins. I had my eye on David Lebovitz’s Brownie recipe for quite a while… In 40 minutes time, I was lying on my couch with a mini brownie muffin in my hand and Six Feet Under - Season 2 in my DVD player (I am soo behind David). I followed the recipe word for word, but minus Dulce de Leche; cooking time down to 20 mins for cupcake size (damn portion control). It turned out be quite firm and moist, just the way I like it.
